- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 pound chicken breasts, cubed
- 1 cup long-grain rice
- 6 cups chicken broth
- Juice of 2 lemons
- Zest of 1 lemon
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add chicken cubes and cook until browned on all sides.
- Pour in chicken broth and bring to a boil.
- Add rice, lemon juice, lemon zest, thyme, salt, and pepper.
- Reduce heat and simmer for 20-25 minutes, or until rice is tender and chicken is cooked through.
- Adjust seasoning if needed and garnish with fresh parsley before serving.
Notes
For a creamier soup, stir in a splash of heavy cream at the end. This recipe freezes well for up to 3 months.
