Ingredients

  • 2 carrots, sliced
  • 2 celery stalks, chopped

  • 1 pound chicken breasts, cubed
  • 1 cup long-grain rice
  • 6 cups chicken broth
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened, about 5 minutes.
  3. Stir in garlic and cook for another minute.
  4. Add chicken cubes and cook until browned on all sides.
  5. Pour in chicken broth and bring to a boil.
  6. Add rice, lemon juice, lemon zest, thyme, salt, and pepper.
  7. Reduce heat and simmer for 20-25 minutes, or until rice is tender and chicken is cooked through.
