Cranberry Brie and Mozzarella Grilled Sandwich

A decadent and gooey grilled cheese sandwich featuring creamy brie, melted mozzarella, and sweet-tart cranberry sauce on buttery, golden bread.

For the Crust:

  • 8 slices sourdough or artisan bread
  • 4 tbsp unsalted butter, softened
  • 6 oz brie cheese, rind removed and sliced
  • 1 cup shredded low-moisture mozzarella cheese
  • 1/2 cup whole-berry cranberry sauce
  • 1/4 tsp fresh thyme leaves (optional)

Instructions

1. Prepare the Crust:

  1. Spread one side of each bread slice with softened butter. Flip four slices over so the buttered side is down.
  2. Layer the brie and mozzarella cheeses evenly on the unbuttered side of the four bread slices.
  3. Spoon cranberry sauce over the cheese and sprinkle with thyme if using.
  4. Top with the remaining bread slices, buttered side facing out.
  5. Heat a skillet or griddle over medium-low heat. Cook sandwiches for 3-4 minutes per side, pressing down gently, until the bread is golden brown and the cheese is fully melted.

Notes

You can customize the seasonings to taste.
