Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries
  • Zest of 1 orange
  • 1/2 cup orange juice
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Stir in the cranberries and orange zest.
  4. In another bowl, mix the orange juice, milk, oil, eggs, and vanilla extract.
  5. Combine the wet and dry ingredients until just mixed.
  6. Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.

Notes

For a twist, add chopped nuts or substitute with dried cranberries if fresh ones are unavailable.
