Description

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 cups fresh cranberries
  • 2 large oranges, zested and segmented
  • Fresh rosemary sprigs for garnish

Instructions

  1. Preheat the oven to 300Β°F (150Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites with an electric mixer until soft peaks form.
  3. Gradually add the sugar, one tablespoon at a time, beating until the mixture is glossy and stiff peaks form.
  4. Gently fold in the vanilla extract and cornstarch.
  5. Spoon the meringue onto the prepared baking sheet, shaping it into a wreath circle about 10 inches in diameter.
  6. Bake for 1 hour, then turn off the oven and let the pavlova cool inside for another hour.
  7. Once cooled, top with fresh cranberries, orange segments, and garnish with rosemary sprigs before serving.
