Description

A festive shortbread cookie bursting with tart cranberries and bright orange zest, perfect for holiday baking.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 tablespoon orange zest
  • 1 cup dried cranberries
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  2. Add the orange zest and vanilla extract, mixing well.
  3. Gradually stir in the flour until a dough forms.
  4. Fold in the dried cranberries.
  5. Shape the dough into a log, wrap in plastic, and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Slice the log into 1/4-inch rounds and place on a baking sheet.
  7. Bake for 10-12 minutes or until edges are golden. Cool on a wire rack.

Notes

These cookies can be stored in an airtight container for up to a week. For a twist, add chopped nuts.
