Description

Juicy chicken breasts stuffed with a flavorful mixture of spinach, dried cranberries, and creamy goat cheese, perfect for a healthy and elegant dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1/2 cup dried cranberries
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375Β°F (190Β°C).
  2. In a bowl, mix together the chopped spinach, dried cranberries, and crumbled goat cheese.
  3. Carefully cut a pocket into each chicken breast without cutting all the way through.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
  5. Season the outside of the chicken breasts with salt, pepper, and garlic powder.
  6. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 2-3 minutes on each side.
  7. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165Β°F (74Β°C).
  8. Let rest for 5 minutes before serving.

Notes

Ensure the chicken is fully cooked to avoid foodborne illness. For a variation, add chopped nuts to the stuffing for extra crunch.
