- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1/2 cup dried cranberries
- 4 ounces goat cheese, crumbled
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 375Β°F (190Β°C).
- In a bowl, mix together the chopped spinach, dried cranberries, and crumbled goat cheese.
- Carefully cut a pocket into each chicken breast without cutting all the way through.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
- Season the outside of the chicken breasts with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium heat and sear the chicken breasts for 2-3 minutes on each side.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165Β°F (74Β°C).
- Let rest for 5 minutes before serving.
Notes
