- 2 ripe avocados
- 1/2 cup Greek yogurt
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1 jalapeΓ±o, seeded and minced
- 2 tablespoons lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cut the avocados in half and remove the pits.
- Scoop out the flesh into a bowl.
- Mash the avocado with a fork until smooth.
- Add Greek yogurt, diced tomatoes, red onion, jalapeΓ±o, and lime juice to the bowl.
- Mix well and season with salt and pepper.
- Spoon the mixture back into the avocado skins.
- Garnish with fresh cilantro and serve immediately.
Notes
For a spicier version, leave the seeds in the jalapeΓ±o.
