- 1 pound fresh mushrooms, sliced
- 2 cups fresh spinach leaves
- 1 pound boneless chicken breast, cubed
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 garlic cloves, minced
- Salt and pepper to taste
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 375Β°F (190Β°C).
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced mushrooms and garlic, sautΓ© until mushrooms are golden brown, about 5 minutes.
- Add the cubed chicken and cook until no longer pink, about 7 minutes.
- Stir in the spinach, heavy cream, Parmesan cheese, salt, pepper, and thyme. Cook until spinach wilts and mixture is creamy.
- Transfer the mixture to a baking dish and spread evenly.
- Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.
- Remove from oven and let cool for 5 minutes before serving.
Notes
For a vegetarian version, substitute chicken with tofu or omit it entirely. Ensure mushrooms are fresh for the best flavor.
