Ingredients

  • 1 pound fresh mushrooms, sliced
  • 2 cups fresh spinach leaves
  • 1 pound boneless chicken breast, cubed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced mushrooms and garlic, sautΓ© until mushrooms are golden brown, about 5 minutes.
  4. Add the cubed chicken and cook until no longer pink, about 7 minutes.
  5. Stir in the spinach, heavy cream, Parmesan cheese, salt, pepper, and thyme. Cook until spinach wilts and mixture is creamy.
  6. Transfer the mixture to a baking dish and spread evenly.
  7. Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.
  8. Remove from oven and let cool for 5 minutes before serving.

Notes

For a vegetarian version, substitute chicken with tofu or omit it entirely. Ensure mushrooms are fresh for the best flavor.
