- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the fettuccine according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken slices, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese until melted and creamy.
- Add the cooked chicken and sun-dried tomatoes to the sauce, stirring to combine. Cook for an additional 2-3 minutes.
- Toss the cooked fettuccine in the sauce until well coated.
- Garnish with fresh parsley and serve immediately.
Notes
For a lighter version, substitute half-and-half for heavy cream. Ensure chicken is fully cooked to avoid food safety issues.
