Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the fettuccine according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken slices, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese until melted and creamy.
  5. Add the cooked chicken and sun-dried tomatoes to the sauce, stirring to combine. Cook for an additional 2-3 minutes.
  6. Toss the cooked fettuccine in the sauce until well coated.
