Description

This creamy chicken noodle soup is a cozy, easy comfort food that’s perfect for cold days.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 pound chicken breast, cubed
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened.
  3. Add garlic and cook for another minute.
  4. Add chicken and cook until browned.
  5. Pour in chicken broth and bring to a boil.
  6. Add noodles and cook until tender.
  7. Stir in heavy cream and season with salt and pepper.
  8. Simmer for a few minutes and serve.

Notes

For a thicker soup, add a slurry of cornstarch and water.
