For the Crust:
- 1 lb boneless, skinless chicken breasts
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add minced garlic, thyme, and parsley. Stir for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil. Add chicken breasts and simmer for 15-20 minutes until cooked through. Remove chicken and shred.
- Return shredded chicken to the pot. Add orzo pasta and cook for 8-10 minutes until tender.
- Stir in heavy cream and season with salt and pepper. Simmer for 5 more minutes until heated through.
- Serve hot and enjoy!
