For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. Add minced garlic, thyme, and parsley. Stir for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil. Add chicken breasts and simmer for 15-20 minutes until cooked through. Remove chicken and shred.
  4. Return shredded chicken to the pot. Add orzo pasta and cook for 8-10 minutes until tender.
  5. Stir in heavy cream and season with salt and pepper. Simmer for 5 more minutes until heated through.
  6. Serve hot and enjoy!
