Description

A hearty and creamy soup made with chicken, wild rice, and vegetables, perfect for cozy nights.


Ingredients

  • 1 cup wild rice
  • 2 boneless chicken breasts, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water and set aside.
  2. In a large pot, melt butter over medium heat. Add onion, carrots, and celery; cook until softened.
  3. Add diced chicken and cook until browned.
  4. Stir in the wild rice and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Stir in heavy cream and season with salt and pepper. Simmer for another 10 minutes.
  6. Serve hot.

Notes

For a thicker soup, add a slurry of flour and water before adding the cream.
