A hearty and creamy soup made with chicken, wild rice, and vegetables, perfect for cozy nights.
Ingredients

- 1 cup wild rice
- 2 boneless chicken breasts, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water and set aside.
- In a large pot, melt butter over medium heat. Add onion, carrots, and celery; cook until softened.
- Add diced chicken and cook until browned.
- Stir in the wild rice and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Stir in heavy cream and season with salt and pepper. Simmer for another 10 minutes.
- Serve hot.
Notes
For a thicker soup, add a slurry of flour and water before adding the cream.
