- 1 head broccoli, cut into florets
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- Salt and pepper to taste
- 1 tablespoon oil for cooking
Instructions
- Season the salmon fillets with salt and pepper.
- In a large pan, heat oil over medium heat and sautΓ© the onion, garlic, and ginger until fragrant.
- Add curry powder and stir for 1 minute.
- Pour in the coconut milk and bring to a simmer.
- Add the salmon fillets and broccoli florets, cover, and cook for 10-15 minutes until salmon is cooked through and broccoli is tender.
