Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 head broccoli, cut into florets
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste
  • 1 tablespoon oil for cooking

Instructions

  1. Season the salmon fillets with salt and pepper.
  2. In a large pan, heat oil over medium heat and sautΓ© the onion, garlic, and ginger until fragrant.
  3. Add curry powder and stir for 1 minute.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add the salmon fillets and broccoli florets, cover, and cook for 10-15 minutes until salmon is cooked through and broccoli is tender.
  6. Serve immediately.
