Description

A flavorful dish featuring salmon cooked in a creamy coconut curry sauce with fresh broccoli.


Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 cup coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 2 cups broccoli florets
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion, garlic, and ginger; sauté until fragrant, about 2 minutes.
  3. Stir in curry powder and cook for 1 minute.
  4. Add salmon fillets and cook for 3 minutes on each side.
  5. Pour in coconut milk and add broccoli florets.
  6. Simmer for 5-7 minutes until salmon is cooked through and broccoli is tender.
  7. Season with salt and pepper, and garnish with fresh cilantro before serving.

Notes

For a spicier version, add red chili flakes. Serve with rice or naan.
