- 2 salmon fillets (6 oz each)
- 1 cup coconut milk
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 2 cups broccoli florets
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion, garlic, and ginger; sauté until fragrant, about 2 minutes.
- Stir in curry powder and cook for 1 minute.
- Add salmon fillets and cook for 3 minutes on each side.
- Pour in coconut milk and add broccoli florets.
- Simmer for 5-7 minutes until salmon is cooked through and broccoli is tender.
- Season with salt and pepper, and garnish with fresh cilantro before serving.
Notes
For a spicier version, add red chili flakes. Serve with rice or naan.
