- 1 cup low-fat cottage cheese
- 2 boneless chicken breasts (about 1 pound)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chicken broth

- Fresh herbs for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, sautΓ© until softened, about 3-4 minutes.
- Add chicken breasts to the skillet and cook until browned on both sides, approximately 5-7 minutes per side.
- In a blender, puree the cottage cheese until smooth.
- Stir the pureed cottage cheese and chicken broth into the skillet with the chicken.
- Simmer the mixture for 10-15 minutes, stirring occasionally, until the sauce thickens and chicken is fully cooked.
- Season with salt and pepper to taste, and garnish with fresh herbs if desired.
- Serve hot over rice or pasta.
