- 6 large hard-boiled eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 slices cooked bacon, crumbled
- 2 tablespoons fresh chives, chopped
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Cut the hard-boiled eggs in half lengthwise and remove the yolks.
- In a bowl, mash the yolks with mayonnaise and mustard until smooth.
- Stir in the crumbled bacon and chopped chives.
- Season with salt and pepper.
- Spoon the mixture back into the egg whites.
- Sprinkle with paprika for garnish.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For a creamier texture, use full-fat mayonnaise. Store leftovers in an airtight container for up to 2 days.
