- 1 lb ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 cup Greek yogurt
- 2 tbsp taco seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground turkey over medium heat until fully cooked, about 5-7 minutes.
- Add the diced onion, garlic, and bell pepper to the pot and sauté until softened, about 3-4 minutes.
- Stir in the taco seasoning, black beans, diced tomatoes, and chicken broth. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes, stirring occasionally.
- Remove from heat and stir in the Greek yogurt until creamy. Season with salt and pepper to taste.
- Serve hot, garnished with optional toppings like cheese or avocado.
Notes
This soup can be made ahead and reheated; add more broth if it thickens. It’s high in protein due to the turkey and Greek yogurt.
