Description

A creamy, high-protein taco soup packed with flavors, perfect for a hearty meal.


Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 cup Greek yogurt
  • 2 tbsp taco seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground turkey over medium heat until fully cooked, about 5-7 minutes.
  2. Add the diced onion, garlic, and bell pepper to the pot and sauté until softened, about 3-4 minutes.
  3. Stir in the taco seasoning, black beans, diced tomatoes, and chicken broth. Bring to a boil.
  4. Reduce heat and simmer for 15-20 minutes, stirring occasionally.
  5. Remove from heat and stir in the Greek yogurt until creamy. Season with salt and pepper to taste.
  6. Serve hot, garnished with optional toppings like cheese or avocado.

Notes

This soup can be made ahead and reheated; add more broth if it thickens. It’s high in protein due to the turkey and Greek yogurt.
