Ingredients

  • 2 cups uncooked white rice
  • 1 pound boneless chicken breasts, cubed
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sliced mushrooms
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. In a large skillet, sautΓ© onions and garlic until translucent.
  3. Add chicken cubes and cook until browned.
  4. Stir in mushrooms, cream of mushroom soup, and chicken broth.
  5. Season with salt and pepper.
  6. In a baking dish, layer the rice and pour the chicken mixture over it.
  7. Cover and bake for 45 minutes or until rice is tender.

Notes

For a creamier texture, add more soup or use low-sodium broth if desired.
