Description

A creamy Italian rice dish made with Arborio rice, mushrooms, and broth, resulting in a rich and flavorful meal.


Ingredients

  • 1 cup Arborio rice
  • 2 cups sliced mushrooms
  • 4 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the broth and keep it warm.
  2. In a large skillet, melt butter over medium heat. Add onion and garlic, sautΓ© until softened.
  3. Add mushrooms and cook until they release their moisture.
  4. Stir in the rice and cook for 1-2 minutes until lightly toasted.
  5. Pour in the white wine and stir until absorbed.
  6. Gradually add the warm broth, one ladle at a time, stirring frequently until the rice is creamy and al dente, about 20 minutes.
  7. Stir in the Parmesan cheese, salt, and pepper. Serve immediately.

Notes

For a vegetarian version, use vegetable broth. Fresh mushrooms enhance the flavor.
