- 1 cup Arborio rice
- 2 cups sliced mushrooms
- 4 cups chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a saucepan, heat the broth and keep it warm.
- In a large skillet, melt butter over medium heat. Add onion and garlic, sautΓ© until softened.
- Add mushrooms and cook until they release their moisture.
- Stir in the rice and cook for 1-2 minutes until lightly toasted.
- Pour in the white wine and stir until absorbed.
- Gradually add the warm broth, one ladle at a time, stirring frequently until the rice is creamy and al dente, about 20 minutes.
- Stir in the Parmesan cheese, salt, and pepper. Serve immediately.
Notes
For a vegetarian version, use vegetable broth. Fresh mushrooms enhance the flavor.
