Ingredients

  • 4 medium beets, peeled and cubed
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Toss the cubed beets and sweet potatoes with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the preheated oven for 25-30 minutes, or until tender.
  4. Remove from oven and let cool slightly.
  5. In a large bowl, combine the roasted beets, sweet potatoes, feta cheese, and parsley.
  6. Drizzle with balsamic vinegar and honey, then toss gently to combine.
  7. Serve immediately or chill for 30 minutes for enhanced flavors.
