- 4 medium beets, peeled and cubed
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese

- 1 teaspoon honey
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Toss the cubed beets and sweet potatoes with olive oil, salt, and pepper on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender.
- Remove from oven and let cool slightly.
- In a large bowl, combine the roasted beets, sweet potatoes, feta cheese, and parsley.
