A quick and elegant one-pan meal featuring plump shrimp, cheese-filled tortellini, and a rich, creamy garlic Parmesan sauce.

For the Crust:
- 1 lb large shrimp, peeled and deveined
- 20 oz package cheese tortellini
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 cup chicken broth
- 2 cups fresh spinach
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil and cook the tortellini according to package directions. Drain and set aside.
- While the tortellini cooks, heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper and cook for 1-2 minutes per side until pink and opaque. Remove shrimp from the skillet.
- In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Pour in the chicken broth to deglaze the pan, scraping up any browned bits.
- Reduce heat to medium-low. Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 2-3 minutes until the sauce begins to thicken.
- Add the fresh spinach and cook until wilted. Return the cooked shrimp and tortellini to the skillet. Toss everything gently to coat in the sauce and heat through. Serve immediately.
