- 2 boneless, skinless chicken breasts, cubed
- 1 pound potato gnocchi
- 2 cups fresh spinach leaves
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add cubed chicken and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the heavy cream and bring to a simmer.
- Add the gnocchi and cook according to package instructions, about 2-3 minutes.
- Stir in the fresh spinach and Parmesan cheese until wilted and melted.
- Season with salt and pepper to taste, and serve hot.
Notes
For a lighter version, substitute half-and-half for heavy cream. Pairs well with garlic bread.
