Description

Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 1 pound potato gnocchi
  • 2 cups fresh spinach leaves
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add cubed chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in the heavy cream and bring to a simmer.
  5. Add the gnocchi and cook according to package instructions, about 2-3 minutes.
  6. Stir in the fresh spinach and Parmesan cheese until wilted and melted.
  7. Season with salt and pepper to taste, and serve hot.

Notes

For a lighter version, substitute half-and-half for heavy cream. Pairs well with garlic bread.
