Ingredients

  • 9 lasagna noodles
  • 2 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups marinara sauce
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  4. Add mushrooms and spinach; cook until vegetables are tender. Season with salt and pepper.
  5. In a bowl, mix ricotta cheese with heavy cream until smooth.
  6. In a baking dish, spread a layer of marinara sauce.
  7. Layer with noodles, ricotta mixture, vegetable mix, and cheeses. Repeat layers.
  8. Top with remaining cheese and bake for 25-30 minutes until bubbly and golden.
  9. Let cool for 10 minutes before serving.

For a vegetarian option, ensure all ingredients are meat-free. Store leftovers in the refrigerator for up to 3 days.
