- 9 lasagna noodles
- 2 cups fresh spinach, chopped
- 2 cups mushrooms, sliced
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 cups marinara sauce
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
- Add mushrooms and spinach; cook until vegetables are tender. Season with salt and pepper.
- In a bowl, mix ricotta cheese with heavy cream until smooth.
- In a baking dish, spread a layer of marinara sauce.
- Layer with noodles, ricotta mixture, vegetable mix, and cheeses. Repeat layers.
- Top with remaining cheese and bake for 25-30 minutes until bubbly and golden.
- Let cool for 10 minutes before serving.
