Description

A hearty and easy creamy taco soup that’s perfect for a comforting meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, tortilla chips

Instructions

  1. In a large pot, brown the ground beef over medium heat until no longer pink; drain excess fat.
  2. Add chopped onion and minced garlic to the pot; cook until softened, about 5 minutes.
  3. Stir in black beans, corn, diced tomatoes, chicken broth, and taco seasoning; bring to a boil.
  4. Reduce heat and simmer for 20 minutes, stirring occasionally.
  5. Stir in heavy cream and season with salt and pepper; simmer for another 5 minutes.
  6. Serve hot with optional toppings.

Notes

For a spicier version, add diced jalapenos or use spicy taco seasoning.
