A hearty and easy creamy taco soup that’s perfect for a comforting meal.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 packet taco seasoning
- 1 cup heavy cream
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, tortilla chips
Instructions
- In a large pot, brown the ground beef over medium heat until no longer pink; drain excess fat.
- Add chopped onion and minced garlic to the pot; cook until softened, about 5 minutes.
- Stir in black beans, corn, diced tomatoes, chicken broth, and taco seasoning; bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Stir in heavy cream and season with salt and pepper; simmer for another 5 minutes.
- Serve hot with optional toppings.
Notes
For a spicier version, add diced jalapenos or use spicy taco seasoning.
