Description

A creamy and hearty soup infused with taco flavors, perfect for a quick and comforting meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 package (8 oz) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat until no longer pink; drain excess fat.
  2. Add the chopped onion and minced garlic to the pot and sauté until softened, about 5 minutes.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and chicken broth. Bring to a boil.
  4. Reduce heat and simmer for 15-20 minutes to allow flavors to meld.
  5. Add the softened cream cheese and shredded cheddar cheese, stirring until melted and creamy.
  6. Season with salt and pepper to taste. Serve hot, garnished with optional toppings like sour cream or tortilla chips.

Notes

This soup can be made in a slow cooker for even easier preparation. Store leftovers in the refrigerator for up to 3 days.
