Description

Ingredients

  • 1 lb chicken breast, sliced
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and cook the chicken slices until browned and cooked through.
  3. Add minced garlic to the skillet and sautΓ© for 1 minute until fragrant.
  4. Stir in the sun-dried tomatoes and heavy cream, bringing to a simmer.
  5. Add the spinach and Parmesan cheese, stirring until the spinach wilts and the sauce thickens.
  6. Toss the cooked pasta with the sauce and chicken; season with salt and pepper.
  7. Serve hot.

Notes

For a healthier option, substitute heavy cream with Greek yogurt. Pairs well with garlic bread.
