- 8 oz penne pasta
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat and cook the chicken slices until browned and cooked through.
- Add minced garlic to the skillet and sautΓ© for 1 minute until fragrant.
- Stir in the sun-dried tomatoes and heavy cream, bringing to a simmer.
- Add the spinach and Parmesan cheese, stirring until the spinach wilts and the sauce thickens.
- Toss the cooked pasta with the sauce and chicken; season with salt and pepper.
- Serve hot.
Notes
