A creamy and hearty chili made with white beans, chicken, and spices for a comforting meal.

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cubed
- 4 cups chicken broth
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 can (4 ounces) diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1 cup shredded Monterey Jack cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; cook until softened, about 5 minutes.
- Add chicken and cook until no longer pink, about 7 minutes.
- Stir in chicken broth, beans, green chilies, cumin, oregano, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in heavy cream and cheese until melted and creamy.
- Serve hot.
Notes
For a spicier version, add more chili powder or fresh jalapeΓ±os. Pairs well with cornbread.
