Ingredients

  • 4 slices of bacon
  • 2 ripe avocados, sliced
  • 4 cups mixed greens
  • 1/2 red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels, then crumble.
  2. In a large bowl, combine the mixed greens, sliced red onion, cherry tomatoes, and sliced avocados.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the salad and toss gently to combine.
