- 500g white fish fillets, such as cod or haddock
- 200g plain flour
- 1 tsp baking powder
- 300ml cold sparkling water
- 1kg potatoes, peeled and cut into chips
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- Peel and cut the potatoes into thick chips, then rinse and pat dry.
- Heat oil in a deep fryer or large pan to 160Β°C.
- Fry the chips for 5-7 minutes until soft but not browned, then drain and set aside.
- In a bowl, mix flour, baking powder, salt, and pepper. Gradually whisk in sparkling water to make a smooth batter.
- Dip the fish fillets into the batter, ensuring they are fully coated.
- Increase oil temperature to 190Β°C and fry the fish for 4-5 minutes until golden and crispy.
- Fry the chips again for 2-3 minutes until golden brown. Drain on paper towels and season with salt.
- Serve immediately with the fish.
Notes
For extra crispiness, ensure the oil is at the correct temperature and do not overcrowd the fryer.
