Instructions
- Grate the potatoes and onion using a box grater or food processor.
- Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, mix the grated potatoes, onion, beaten eggs, flour, salt, and pepper until well combined.
- Heat oil in a skillet over medium-high heat.
- Spoon the potato mixture into the hot oil, flattening with a spatula to form pancakes.
- Fry for 3-4 minutes on each side until golden and crispy.
- Remove from oil and drain on paper towels before serving.
Notes
These pancakes are best served hot with applesauce or sour cream. For extra crispiness, ensure all moisture is removed from the potatoes.
