Crispy Oven Baked Potato Skins

Description

Crispy and flavorful potato skins baked in the oven until golden brown, perfect as an appetizer or snack.


Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • Sour cream for serving

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Wash and scrub the potatoes, then pierce them with a fork several times.
  3. Bake the potatoes in the preheated oven for about 1 hour, or until tender.
  4. Allow the potatoes to cool slightly, then cut them in half lengthwise.
  5. Scoop out the flesh, leaving about 1/4 inch of potato attached to the skin.
  6. Brush the inside of each potato skin with olive oil and season with salt and pepper.
  7. Place the skins back in the oven, cut side down, and bake for 10 minutes.
  8. Flip the skins over, add cheese and bacon, and bake for another 5-10 minutes until crispy and cheese is melted.

Notes

For extra crispiness, broil the skins for the last 2 minutes. Serve hot with sour cream or your favorite dip.
