Description
Crispy and flavorful potato skins baked in the oven until golden brown, perfect as an appetizer or snack.

- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- Sour cream for serving
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Wash and scrub the potatoes, then pierce them with a fork several times.
- Bake the potatoes in the preheated oven for about 1 hour, or until tender.
- Allow the potatoes to cool slightly, then cut them in half lengthwise.
- Scoop out the flesh, leaving about 1/4 inch of potato attached to the skin.
- Brush the inside of each potato skin with olive oil and season with salt and pepper.
- Place the skins back in the oven, cut side down, and bake for 10 minutes.
- Flip the skins over, add cheese and bacon, and bake for another 5-10 minutes until crispy and cheese is melted.
Notes
For extra crispiness, broil the skins for the last 2 minutes. Serve hot with sour cream or your favorite dip.
