- 2 tablespoons olive oil
- Kosher salt, to taste

Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- Place the carrots on the prepared baking sheet. Drizzle with olive oil and season generously with salt and pepper. Toss to coat evenly.
- Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender but not mushy and slightly browned on the bottom.
- Remove the baking sheet from the oven. Using a sturdy fork or the bottom of a glass, gently smash each carrot down to about half its original thickness. Be careful not to mash them completely.
- Drizzle a little more olive oil over the smashed carrots if needed, and season with additional salt and pepper.
- Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the carrots are crispy and golden brown around the edges.
- Remove from the oven and let cool slightly. Garnish with fresh herbs if desired. Serve immediately for maximum crispiness.
Notes
For best results, select carrots that are similar in size so they cook evenly. You can adjust the seasoning to your preference, adding a pinch of red pepper flakes for heat or Parmesan cheese for extra flavor. Leftovers can be reheated in the oven to maintain crispness.
