Crockpot Parmesan Roasted Potatoes

Description

These slow cooker parmesan roasted potatoes are crispy on the outside, tender inside, and packed with garlic and parmesan flavor. Perfect side dish for any meal!


Ingredients

  • 3 pounds baby red potatoes halved
  • 1/2 cup olive oil
  • 1 cup grated parmesan cheese
  • 4 cloves garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Wash and halve the potatoes.
  2. In a large bowl, mix olive oil, parmesan, garlic, basil, oregano, parsley, paprika, salt, and pepper.
  3. Add potatoes to the mixture and toss to coat evenly.
  4. Place coated potatoes in the crockpot.
  5. Cook on high for 3-4 hours or low for 6-7 hours, until tender.
  6. Sprinkle additional parmesan on top before serving if desired.

Notes

For extra crispiness, you can place the potatoes under the broiler for 2-3 minutes before serving. This recipe serves 6-8 people as a side dish.
