- 1 pound ground beef
 - 1 onion, chopped
 - 1 packet taco seasoning
 - 2 cups uncooked pasta (such as rotini or penne)
 - 1 can (15 oz) black beans, drained and rinsed
 - 1 can (14.5 oz) diced tomatoes
 - 1 cup corn kernels
 - 2 cups beef broth
 - 1 cup shredded cheddar cheese
 - Salt and pepper to taste
 
Instructions
- Brown the ground beef and chopped onion in a skillet over medium heat until the beef is no longer pink; drain excess fat.
 - Transfer the beef mixture to the crockpot.
 - Add taco seasoning, uncooked pasta, black beans, diced tomatoes, corn, and beef broth to the crockpot; stir to combine.
 - Cover and cook on low for 6-8 hours, or until the pasta is tender.
 - Stir in the shredded cheddar cheese during the last 30 minutes of cooking.
 - Season with salt and pepper to taste, then serve hot.
