Description

These muffins combine the crunch of chocolate with creamy caramel and cream cheese for an easy, irresistible dessert that’s perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1 cup caramel sauce
  • 1/2 cup chocolate chips
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the cream cheese until smooth, then mix in the caramel sauce and chocolate chips.
  4. Add the eggs, milk, and vegetable oil to the dry ingredients and stir until just combined.
  5. Fold in the cream cheese mixture gently.
  6. Spoon the batter into the muffin liners, filling each about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the tin for 10 minutes, then transfer to a wire rack.

Notes

For extra crunch, add chopped nuts to the batter. Store in an airtight container for up to 3 days.
