Description

Delicious bars made with grated carrots, warm spices, and topped with creamy cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • For frosting: 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in grated carrots and walnuts if using.
  5. Spread the batter evenly into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow bars to cool completely in the pan on a wire rack.
  7. For the frosting: In a bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  8. Spread frosting over cooled bars. Cut into squares and serve.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For extra flavor, add a pinch of ginger to the batter.
