- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- For frosting: 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Grease a 9×13 inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in grated carrots and walnuts if using.
- Spread the batter evenly into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow bars to cool completely in the pan on a wire rack.
- For the frosting: In a bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
- Spread frosting over cooled bars. Cut into squares and serve.
Notes
Store in an airtight container in the refrigerator for up to 5 days. For extra flavor, add a pinch of ginger to the batter.
