Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 tablespoons lemon zest
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, combine sugar and lemon zest. Rub together with your fingers until fragrant.
  4. Add oil, milk, and eggs to the sugar mixture and whisk until smooth.
  5. Stir in the dry ingredients until just combined.
  6. Add lemon juice and mix.
  7. Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let cool in pan for 10 minutes, then transfer to a wire rack.
  9. For the glaze: Whisk together powdered sugar and lemon juice until smooth.
  10. Drizzle over cooled loaf.
