- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 2 tablespoons lemon zest
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 large eggs
- 1/4 cup fresh lemon juice
- For the glaze: 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
- Preheat oven to 350Β°F (175Β°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, combine sugar and lemon zest. Rub together with your fingers until fragrant.
- Add oil, milk, and eggs to the sugar mixture and whisk until smooth.
- Stir in the dry ingredients until just combined.
- Add lemon juice and mix.
- Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack.
- For the glaze: Whisk together powdered sugar and lemon juice until smooth.
- Drizzle over cooled loaf.
