Dreamy Strawberry Vanilla Bean Ice Cream

A rich and creamy homemade ice cream bursting with fresh strawberry flavor and flecks of real vanilla bean.


Ingredients

For the Crust:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 1 vanilla bean, split and seeds scraped
  • 2 cups fresh strawberries, hulled and chopped
  • 2 tablespoons lemon juice

Instructions

1. Prepare the Crust:

  1. In a medium bowl, combine the heavy cream, milk, sugar, and salt. Whisk until the sugar is dissolved.
  2. Stir in the seeds from the vanilla bean and the empty pod. Cover and refrigerate for at least 1 hour, or up to overnight.
  3. Meanwhile, mash the strawberries with a fork or potato masher. Stir in the lemon juice. Cover and refrigerate.
  4. Remove the vanilla bean pod from the cream mixture. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. In the last 5 minutes of churning, add the chilled mashed strawberries. Churn until fully incorporated.
  6. Transfer to an airtight container and freeze for at least 4 hours, or until firm.

Notes

You can customize the seasonings to taste.
