  • 1 cup mashed ripe bananas
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter, cream cheese, and sugar until creamy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Mix in the mashed bananas.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, and stir until just combined.
  7. Spoon the batter into the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  10. Frost with cream cheese frosting if desired.

Notes

Store in an airtight container for up to 3 days. For a healthier option, use whole wheat flour.
