These carrot cake bars are a simple, moist dessert topped with creamy frosting, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • For Frosting:
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat together the oil, sugar, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots and walnuts if using.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool completely on a wire rack.
  9. For the frosting: In a bowl, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  10. Spread the frosting over the cooled bars and cut into squares.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For a healthier version, substitute some of the sugar with applesauce.
