- 2 large eggs
- 1 teaspoon vanilla extract
- Cream Cheese Frosting Ingredients:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, and cinnamon.
- In another bowl, mix the grated carrots, granulated sugar, brown sugar, oil, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely before frosting.
- For the frosting: In a medium bowl, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
- Spread the frosting over the cooled bars and cut into squares.
Notes
Store in an airtight container in the refrigerator for up to 5 days. For extra flavor, add chopped walnuts or pecans to the batter.
