Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Cream Cheese Frosting Ingredients:
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and cinnamon.
  3. In another bowl, mix the grated carrots, granulated sugar, brown sugar, oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool completely before frosting.
  8. For the frosting: In a medium bowl, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  9. Spread the frosting over the cooled bars and cut into squares.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For extra flavor, add chopped walnuts or pecans to the batter.
