Description

Delicious soft cookies infused with carrot cake spices and topped with a creamy maple cinnamon frosting.


Ingredients

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the frosting: 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots.
  7. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. For the frosting: In a medium bowl, beat the cream cheese and butter until smooth.
  10. Gradually add the powdered sugar, maple syrup, and cinnamon, beating until creamy.
  11. Once the cookies are completely cooled, spread the frosting on top.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days. For a healthier option, substitute some of the flour with whole wheat flour.
