Description

Delicious cupcakes combining the tartness of cherries and lime for a refreshing treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 1 cup fresh cherries, pitted and chopped
  • For the frosting: 1 cup powdered sugar, 2 tablespoons lime juice, 1/2 cup cherries for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix in lime juice and zest, then fold in chopped cherries.
  5. Divide batter evenly among cupcake liners and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  6. Allow cupcakes to cool completely. For frosting, whisk powdered sugar and lime juice until smooth, then spread over cupcakes and top with cherries.
