Description

A simple and hearty soup made with chicken, vegetables, and noodles, perfect for a quick meal.


Ingredients

  • 2 boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 2 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened.
  3. Add chicken breasts and chicken broth; bring to a boil.
  4. Reduce heat and simmer until chicken is cooked through.
  5. Remove chicken, shred it, and return to the pot.
  6. Add egg noodles and cook until tender.
  7. Season with salt and pepper, then serve hot.

Notes

For a healthier version, use whole wheat noodles. Store leftovers in the refrigerator for up to 3 days.
