- 2 lbs chicken breast, cubed
- 4 medium sweet potatoes, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat oven to 375Β°F.
- In a large skillet, heat olive oil over medium heat and sautΓ© onion and garlic until softened.
- Add cubed chicken and cook until browned.
- Layer sweet potatoes in a baking dish, top with chicken mixture, and pour chicken broth over it.
- Season with paprika, salt, and pepper.
- Cover and bake for 45 minutes, then uncover and bake for an additional 15 minutes until golden.
