Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon
  • 1/4 cup brown sugar for swirling

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a small bowl, mix the ground cinnamon and brown sugar for the swirl.
  6. Fill each muffin cup halfway with batter, then add a teaspoon of the cinnamon mixture, and top with more batter.
  7. Swirl the cinnamon mixture into the batter using a toothpick.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Ensure the cinnamon sugar is swirled evenly for the best flavor. Store leftovers in an airtight container for up to 3 days.
