- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons ground cinnamon
- 1/4 cup brown sugar for swirling
Instructions
- Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix the ground cinnamon and brown sugar for the swirl.
- Fill each muffin cup halfway with batter, then add a teaspoon of the cinnamon mixture, and top with more batter.
- Swirl the cinnamon mixture into the batter using a toothpick.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
Ensure the cinnamon sugar is swirled evenly for the best flavor. Store leftovers in an airtight container for up to 3 days.
