- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons ground cinnamon mixed with 1/4 cup sugar for swirling
Instructions
- Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, oil, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix the cinnamon and sugar for the swirl.
- Fill each muffin cup halfway with batter, then sprinkle some cinnamon sugar mixture on top, and add more batter to fill the cups 3/4 full.
- Use a toothpick to swirl the cinnamon sugar into the batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack.
Notes
For a extra flavor, add chopped nuts or chocolate chips to the batter. Ensure the cinnamon sugar is swirled well for even distribution.
