Delicious homemade muffins with a sweet cinnamon sugar swirl, ideal for a quick and tasty breakfast.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon mixed with 1/4 cup sugar for swirling

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a small bowl, mix the cinnamon and sugar for the swirl.
  6. Fill each muffin cup halfway with batter, then sprinkle some cinnamon sugar mixture on top, and add more batter to fill the cups 3/4 full.
  7. Use a toothpick to swirl the cinnamon sugar into the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

For a extra flavor, add chopped nuts or chocolate chips to the batter. Ensure the cinnamon sugar is swirled well for even distribution.
