- 2 cans (15 oz each) of corn kernels, drained
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced green onions
- 1/2 cup diced red bell pepper
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the softened cream cheese and sour cream until smooth.
- Add the drained corn kernels, shredded cheddar cheese, diced green onions, diced red bell pepper, garlic powder, salt, and pepper to the bowl.
- Mix all ingredients thoroughly until well combined.
- Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
- Serve chilled with tortilla chips or crackers.
Notes
This dip can be stored in the refrigerator for up to 3 days. For a spicier version, add chopped jalapeños.
