- For the cake: 200g dark chocolate, melted
- 4 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- For the filling: 2 cups pitted cherries
- 1/4 cup cherry brandy
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 180°C (350°F) and grease two 9-inch round cake pans.
- In a large bowl, beat the eggs and sugar until light and fluffy.
- Fold in the melted chocolate, flour, and cocoa powder until well combined.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow the cakes to cool completely.
- For the filling, mix the cherries with cherry brandy and let sit for 10 minutes.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Assemble the cake by layering one cake with whipped cream and cherries, then top with the second cake and frost the outside.
