Light and airy meringue cookies flavored with Jello for a fun twist.
Ingredients

- 3 egg whites
- 1/4 teaspoon cream of tartar
- 3/4 cup granulated sugar
- 1 (3-ounce) package Jello gelatin (any flavor)
- Optional: Food coloring or sprinkles for decoration
Instructions
- Preheat your oven to 200°F (95°C) and line baking sheets with parchment paper.
- In a clean, dry bowl, beat the egg whites and cream of tartar with an electric mixer on medium speed until soft peaks form.
- Gradually add the sugar, one tablespoon at a time, beating on high speed until stiff peaks form and the mixture is glossy.
- Gently fold in the Jello powder until just combined, being careful not to deflate the mixture.
- Drop spoonfuls of the mixture onto the prepared baking sheets, or pipe them using a pastry bag for uniform shapes.
- Bake for 1.5 to 2 hours, or until the cookies are dry and easily lift off the parchment. Turn off the oven and let them cool inside for another hour.
- Once cooled, store in an airtight container.
Notes
These cookies are best enjoyed fresh but can be stored for up to a week. Experiment with different Jello flavors for variety.
